Really, this is 'Dutch Apple with Toffee Surprise'
Ingredients for pie:
1 your favorite homemade pie crusts or 1 ready-made pie crust (I use Pete's Pie Crust of course: http://recipes.boguszewski.com/index.php?title=Pete%27s_Pie_Crust)
5 1/2 cups peeled cored sliced cooking apples (from 6 – 8 apples of different varieties) (use a mix of Golden Delicious, Braeburn, Jonagold, Cortland, Granny Smith, Gala, or Honey Crisp) (I find a mix of Braeburn and Honey Crisp work great, sweet but not too sweet but not tart at all)
1 tablespoon lemon juice
1/2 cup granulated sugar
1/4 cup brown sugar, packed
3 tablespoons flour
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon all spice
1 to 3 dashes Angostura bitters (optional - one is nice without being overpowering)
Ingredients for first topping (the toffee):
1.5 to 2 oz of fresh homemade toffee (see Pete's toffee recipe: http://recipes.boguszewski.com/index.php?title=Pete%27s_English_Toffee)
Ingredients for topping:
3/4 cup flour
1/4 cup granulated sugar
1/4 cup brown sugar, packed
1/3 cup butter or 1/3 cup margarine, room temperature
Directions:
Preheat oven to 375°F. Fit pie crust into pie plate. In a large bowl, mix sliced apples, lemon juice, both sugars,flour, cinnamon and nutmeg. Pile into crust. Add a layer of toffee directly on the apples. In a medium bowl, with a pastry blender or a fork, mix flour, both sugars, and butter until coarsely crumbled. Sprinkle the prepared topping evenly over the toffee and apples. Bake at 375°F for 45-50 minutes, checking after 45.
