Ingredients Sauce:
1/2 cup soy sauce
1/4 cup water
2 tablespoons sweet rice wine
1 tablespoon, plus 2 teaspoons brown sugar
1/4 cup sugar
1 1/2 teaspoons minced garlic
1 1/2 teaspoons minced ginger
Optional: 2 Tablespoons Pineapple Juice, frozen concentrate
OR
Disney Style Sauce:
1 cup Aji-Mirin
1 cup soy sauce
1 cup granulated sugar
1 cup brown sugar
1 garlic clove, chopped
1 tablespoon ginger, chopped
Directions
Sauce: Combine ingredients in a saucepan on medium heat until the sugar is dissolved. This will be VERY runny. We pretty much always add the cornstarch to thicken it a bit.
Glaze: To make glaze: Mix 1/2 tablespoon cornstarch with 1 tablespoon water. Heat sauce on medium-high heat and add the cornstarch water mixture. Simmer until thickened.
Thicker sauce for dipping: Mix 1 to 2 tablespoons cornstarch with 1 to 2 tablespoons of water (I mix 2/2 and add about half, adding more until I reach desired consistency). Heat sauce on medium-high heat and add the cornstarch water mixture. Simmer until thickened.
